Over Christmas break, I made my usual Jelly thumbprint cookies and peanut butter fudge. We also decided to try something new, and added in a batch of buckeyes. My husband had been saying he wanted to get some soon and I figured why not try it out myself? Everything we made was a hit, but we all noticed how rich the buckeyes were with all of the peanut butter and chocolate. Dave got creative and decided we should make some with white chocolate. I married a very smart man who comes up with some very creative things. The white chocolate buckeyes are AMAZING! I will never make them with milk chocolate again.
It’s Β very easy to make your own buckeyes. Even your kids can help!
Ingredients:
1 1/2 cups peanut butter
1 cup butter, softened
1/2 teaspoon vanilla extract
6 cups confectioners’ sugar
4 cups white chocolate chips
- In a large bowl, mix together the peanut butter, butter, vanilla and confectioners’ sugar. The dough will look dry. Roll into 1 inch balls and place on a waxed paper-lined cookie sheet.
- Press a toothpick into the top of each ball (to be used later as the handle for dipping) and chill in freezer until firm, about 30 minutes.
- Melt the white chocolate chips in the microwave. Heat for 2 minutess, stir, and heat for more 1 minute, 10 seconds, on high.
- Dip frozen peanut butter balls in the white chocolate holding onto the toothpick. Leave a small portion of peanut butter showing at the top to make them look like Buckeyes. Place the finished buckeyes back on the cookie sheet or in a container. Refrigeration is not necessary but could be good for hot days.
The recipe says it will be ready in 50 minutes. That could work if you’re on the ball and don’t have the distraction of kids around. I would allow more time since it does take a bit of time to get it all rolled into balls.

My mom used to make Buckeyes all the time when I was growing up, mostly around the holidays. To me, there is no greater combination than that of chocolate and peanut butter. I am more of a bittersweet kinda guy but my kids like white and milk chocolate, can’t blame them as I was the same when I was younger. Thanks for the trip down memory lane, I’ll have to make these sometime soon!

I did the same 2 years ago using Nestle Premiere white morsels due to have a coworker has an allergy to milk chocolate. Now have other coworkers threaten my life if don’t make white buckeyes.

Dione – I now sell various baked goods out of my home. The White Chocolate Buckeyes are one of my top sellers. I rarely even mention that I make them with milk chocolate because everyone usually prefers the white once they’ve tasted them! π
