My original plans for this post went out the window when covid-19 snuck in to my home. So today I’m sharing a family favorite. There are too many times at least one one of my kids don’t like something on the table. But it’s another situation with this chicken noodle soup. Even my 4 year old who ‘doesn’t like soup’ emptied his bowl and filled his belly.
From my previous posts you all have learned that I’m not a big fan of meat so I try to only use the best. So I start off my homemade chicken noodle soup with Gerber’s Amish Farm Chicken Breast from my local Acme Fresh Market.
Before you get started you should gather:
*about 2 pounds of chicken
*2-3 medium sized carrots
*1-2 celery sticks
*1/2 an onion
*6 ounces uncooked egg noodles
*4 32oz containers of chicken broth
I start by getting a pot of water boiling (for the chicken) and a pot of chicken broth boiling (for the noodles and veggies).
Since I usually have mine frozen, I then put my chicken on a plate and do a quick defrost in the microwave.
I only defrost enough to easily remove from the packaging, but fully frozen or fresh from the store is okay, just adjust the cooking time as needed. I boil my chicken for about 30-35 minutes until it is fully cooked.
While the chicken is cooking, I get my onions, celery, and carrots boiling in the chicken broth. Once those are tender, I add in noodles for 8-10 minutes. As soon as the noodles are done, I remove from heat to avoid overcooking.
Once the chicken is done, shred or chop to your liking. Add the chicken to the noodles and veggies. Add salt, pepper, or garlic salt to your liking. Heat and serve.
The amounts I used gave about 8-10 servings.
